Try growing a “weed” vegetable garden. Pick edible ground elder leaves before they open, and wilt their long, succulent stems in olive oil with garlic and herbs. Blanch dandelion crowns for a mildly bitter, chicorylike salad leaf. Or combine their roots with those of burdock to make a delicious root beer.

NATURE’S HELPERS

Weeds colonize bare ground because they’re nature’s way of preventing soil erosion. They protect carbon locked into the soil, then add their own payload from carbon-packed roots to nitrogen-rich top growth. Cut them away at ground level before they seed, compost the tops, and leave roots in the ground to get all these benefits without the drawbacks.

By all means, remove weeds you have good reason to dislike, such as bindweed, which strangles nearby plants. And maybe reserve a spot away from the house for less aesthetically pleasing plants, such as docks and nettles. But where you can, put away the hoe and welcome your wildflowers into your newly weed-free garden.
